Preparation

Step 1

Option: Smoke the Glass
Toast the end of a cinnamon stick with a lighter or kitchen torch until it smokes. Place it on a heat-safe surface and immediately invert your short glass (rocks glass) over it to trap the smoke. Let it infuse for 1 minute.

Bartender's tip

Smoke clings best to cold surfaces. Chill your glass in the freezer for a few minutes beforehand; the condensation will lock in those rich, roasted cinnamon notes beautifully.

Step 2

Build the Cocktail
Turn the glass right-side up, remove the cinnamon stick, and immediately fill it to the brim with ice cubes. Pour in the 50 ml of Sober Spirits W 0.0%, 80 ml of apple juice, 10 ml of honey, and the freshly squeezed juice of half a lemon.

Bartender's tip

Raw honey seizes and hardens when it hits ice! To fix this, make a quick "honey syrup" by dissolving your honey with a tiny splash of warm water (or the fresh lemon juice) in a small dish before adding it to the iced glass. It will blend flawlessly!

Step 3

The Perfect Stir
Using a long bar spoon, gently stir the cocktail from the bottom up for about 10 to 15 seconds.

Bartender's tip

Slide the back of the spoon along the inside wall of the glass without violently chipping the ice. Your goal is to lift the heavy honey syrup from the bottom and integrate it smoothly with the spirit and apple juice.

Step 4

The Final Garnish
Dust a light pinch of ground cinnamon over the ice and elegantly place a dehydrated apple slice on top.
