Ingredients
- 50 ml of Sober Spirits G 0.0%
- 15 ml lemon juice (=1/2 lemon)
- 15 ml of Raspberry syrup
- Eggwhite (or aquafaba)
- Ice
Give this recipe a twist by replacing the raspberry syrup with strawberry syrup.
Preparation
Step 1
Chill Your Glassware
Before you even touch a bottle, place your coupe or Martini glass in the freezer, or fill it to the brim with ice and a little water to chill while you build your drink.

Bartender's tip
Temperature is an ingredient! A pre-chilled glass not only keeps your cocktail refreshing for longer, but it also helps stabilize the delicate egg white foam, preventing it from collapsing too quickly.
Step 2
Measure and Combine the Ingredients
Into the larger half of your shaker, pour your Sober Spirits G 0.0%, fresh lemon juice, raspberry syrup (or muddled fresh raspberries), and finally, the egg white or aquafaba.

Bartender's tip
Always squeeze your lemons fresh rather than using bottled juice; the natural, sharp acidity is crucial to balance the sweet raspberry. Also, crack your egg into a separate small dish first—if a piece of shell falls in or the yolk breaks, your expensive spirit won't be ruined!
Step 3
The Essential "Dry Shake"
Seal your empty shaker (without any ice) and shake vigorously for about 15 seconds

Bartender's tip
Want a thicker, creamier foam? Take the metal spring off your Hawthorne cocktail strainer and drop it straight into the shaker for the dry shake. It acts like a whisk, whipping the proteins into a luxurious, meringue-like texture much faster!
Step 4
The "Wet Shake"
Open the shaker, remove the spring if you used the trick above, and fill the shaker with ice. Seal it tightly and shake hard for another 10 to 15 seconds to chill and dilute the cocktail.

Bartender's tip
Use the largest, most solid ice cubes you have. Standard hollow freezer ice melts very quickly and can over-dilute your drink, making it watery. Large, solid cubes chill the liquid rapidly without watering down the bold flavors of the Sober Spirits.
Step 5
Double Strain and Garnish
Empty the ice water from your chilled glass. Place your standard cocktail strainer over the shaker and pour the drink through a fine-mesh tea strainer directly into your glass. Finish by skewering three fresh raspberries on a cocktail pick and resting it across the rim.

Bartender's tip
Double straining is non-negotiable for a Clover Club. It catches all the tiny ice shards created during the shake, as well as any stray raspberry seeds, ensuring your cocktail has a perfectly flawless, velvety mouthfeel.
